Granola Candy
12 candies

  • ½c fat-free/low-fat fruit granola
  • ½c crispy corn puff cereal
  • 2T dried cranberries
  • ½c miniature marshmallows
  • 1T honey
  • 1T reduced-fat peanut butter
Line cookie sheet with waxed paper. Mix granola, cereal, and cranberries in medium bowl. Heat remaining ingredients, stirring until marshmallows are melted. Immediately pour over cereal mixture; stir until evenly coated. Shape mixture in to 1½-inch balls, using wet hands. Place on waxed paper. Refrigerate at least 10 minutes.

So, Nick—and you’ll be hearing more about Nick in the near future, I’m certain—Nick and I set out to make these tasty little morsels yesterday. Nick is a little intimidating in the kitchen. At least for me…and considering my genius with a cookie scoop, that’s saying something. Really, what it is, is that he’s so into presentation. I feel oafish in comparison.

But the long and the short of it is that we set out to make Granola Candy together. We were going to make cranberry oatmeal cookies, but he didn’t have a cookie scoop and I was forced to pull the diva act on his kitchen and just refuse to make cookies of any kind.

They are the easiest things in the world to make, and we survived the incident with minimal injury. I highly suggest them…and at 40 calories a pop, you really can’t go wrong. Hmmm…this is a boring post…but at least it got your appetite whetted…but for granola candy?—I’m not entirely certain.

  1. I simply cannot believe that you cut off ‘his’ face–sheesh, come on Laura–share–no, not the granola candy (which I will be making tomorrow afternoon)–his face. 😉

  2. I’m sure there’s a perfectly logical Nick-on-the-counter explanation for the angle of the first shot. . . but I’m going to imagine something much more exciting, involving a ceiling fan.

  3. Can I substitute the cranberries for something like….ohhhhhh…..I don’t know….M&M’s? 🙂 I’m nursing a baby and she sucks a good 600 cals a day out of me…..yes, yes…excellent excuse for making a healthy treat all fattening!
